- 1/2 cup BBQ sauce
- 4 tortillas (flour or corn)
- 1 cup cheese (Monterey Jack, cheddar, or mozzarella)

- 1/2 cup bell peppers
- 1/2 cup mushrooms (optional)
- Fresh herbs (cilantro or parsley)
Instructions
- In a bowl, mix shredded chicken with BBQ sauce until well-coated.
- Heat oil in a skillet over medium heat and sauté onions and bell peppers until soft, about 5-7 minutes.
- Take a tortilla and layer BBQ chicken, sautéed vegetables, and cheese. Fold the tortilla over.
- Wipe the skillet clean, add oil or butter, and toast the filled tortilla for 3-4 minutes per side until golden and crispy.
- Slice into wedges and serve with sour cream, salsa, or avocado.
