Ingredients

  • 3 ripe bananas, mashed
  • 2 cups rolled oats
  • 1/3 cup maple syrup or honey
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional: nuts or dried fruits for add-ins

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish or line it with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, maple syrup (or honey), eggs, baking powder, cinnamon, and salt. Stir until well combined.
  4. If using, fold in nuts or dried fruits.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 25-30 minutes or until the edges turn golden and a toothpick inserted in the center comes out clean.
  7. Let cool before cutting into bars.

Notes

These bars can be stored in an airtight container for up to a week. They can also be frozen for up to three months.
