Ingredients

- 3 ripe bananas, mashed
- 2 cups rolled oats
- 1/3 cup maple syrup or honey
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- Optional: nuts or dried fruits for add-ins
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish or line it with parchment paper.
- In a large mixing bowl, mash the ripe bananas until smooth.
- Add the rolled oats, maple syrup (or honey), eggs, baking powder, cinnamon, and salt. Stir until well combined.
- If using, fold in nuts or dried fruits.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 25-30 minutes or until the edges turn golden and a toothpick inserted in the center comes out clean.
- Let cool before cutting into bars.
Notes
These bars can be stored in an airtight container for up to a week. They can also be frozen for up to three months.
