- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ½ cup unsalted butter, softened
- 2 ripe bananas, mashed
- 1 cup heavy cream
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 eggs
- Optional toppings: whipped cream, banana slices, crushed nuts
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the crust by mixing the flour, sugar, and butter until crumbly. Press into a lined baking dish and bake for 15-20 minutes until golden brown.
- Make the filling by whisking together mashed bananas, heavy cream, sugar, and vanilla in a saucepan over medium heat until thickened, about 5-7 minutes.
- Remove from heat, let cool slightly, and then whisk in the eggs until smooth. Return to low heat, and cook for an additional 2 minutes.
- Pour the filling over the cooled crust, spread evenly, and cool at room temperature before refrigerating for at least 4 hours.
- Slice into squares and top with whipped cream and banana slices before serving.
Notes
Ensure bananas are very ripe for the best sweetness. Allow ample chilling time to set the bars perfectly.
