- 3 ripe bananas
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 cup granulated sugar
- 2 eggs (or flaxseed meal with water for a vegan option)
- 1/3 cup melted butter (or coconut oil)
- 1 cup semi-sweet chocolate chips
- 1/4 tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Grease your mini muffin tin or line with paper liners.
- Mash the ripe bananas in a mixing bowl.
- Add melted butter, sugar, eggs (or flaxseed mix), and vanilla; mix well.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Gently fold the dry ingredients into the wet mixture.
- Stir in the chocolate chips.
- Fill each muffin cup about 2/3 full.
- Bake for 10-12 minutes or until a toothpick comes out clean.
- Let cool on a wire rack and enjoy!

For added texture, try mixing in chopped nuts or shredded coconut.
