- 3–4 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 3 large eggs
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ cup milk
- 1 teaspoon vanilla extract
- 1 cup granulated sugar (for caramel)
- 6 tablespoons unsalted butter (for caramel)
- ½ cup heavy cream (for caramel)
Instructions
- Preheat your oven to 350°F (175°C) and grease your baking pan.
- In a saucepan, melt 1 cup of sugar over medium heat until it turns golden brown. Add 6 tablespoons of butter and stir until melted, then pour in ½ cup of heavy cream and stir until smooth. Set aside to cool.
- In a mixing bowl, mash the ripe bananas until smooth.
- In another bowl, cream together ½ cup of softened butter and 1 cup of sugar until light and fluffy. Beat in the eggs one at a time, then stir in the mashed bananas and 1 teaspoon of vanilla.
- In a separate bowl, mix 2 cups of flour, 1 teaspoon of baking soda, and 1 teaspoon of baking powder. Gradually add the dry ingredients to the wet mixture, alternating with ½ cup of milk, mixing until just combined.
- Pour half of the batter into your prepared pan, layer with half of the caramel, then add the remaining batter and finish with a final drizzle of caramel.
- Bake for 30-35 minutes, or until a toothpick comes out clean. Allow to cool before transferring to a wire rack.
- Serve warm with a scoop of vanilla ice cream or whipped cream.
Notes
Ensure your bananas are overripe for maximum sweetness. You can substitute butter with coconut oil and milk with dairy-free alternatives for a vegan version.
