  • 34 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter (for caramel)
  • ½ cup heavy cream (for caramel)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking pan.
  2. In a saucepan, melt 1 cup of sugar over medium heat until it turns golden brown. Add 6 tablespoons of butter and stir until melted, then pour in ½ cup of heavy cream and stir until smooth. Set aside to cool.
  3. In a mixing bowl, mash the ripe bananas until smooth.
  4. In another bowl, cream together ½ cup of softened butter and 1 cup of sugar until light and fluffy. Beat in the eggs one at a time, then stir in the mashed bananas and 1 teaspoon of vanilla.
  5. In a separate bowl, mix 2 cups of flour, 1 teaspoon of baking soda, and 1 teaspoon of baking powder. Gradually add the dry ingredients to the wet mixture, alternating with ½ cup of milk, mixing until just combined.
  6. Pour half of the batter into your prepared pan, layer with half of the caramel, then add the remaining batter and finish with a final drizzle of caramel.
  7. Bake for 30-35 minutes, or until a toothpick comes out clean. Allow to cool before transferring to a wire rack.
  8. Serve warm with a scoop of vanilla ice cream or whipped cream.

Notes

Ensure your bananas are overripe for maximum sweetness. You can substitute butter with coconut oil and milk with dairy-free alternatives for a vegan version.
