- 12 oz tortellini (fresh or frozen)
- 24 oz marinara sauce
- 8 oz fresh mushrooms (cremini or button), sliced
- 8 oz mozzarella cheese, shredded
- 4 oz parmesan cheese, grated
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add diced onions and minced garlic, sautéing until fragrant and translucent.
- Add sliced mushrooms to the skillet and cook until softened.
- Bring salted water to a boil in a large pot. Add tortellini and cook according to package instructions until al dente.
- Mix the sautéed mushrooms and onions with the marinara sauce in the skillet. Stir in fresh herbs and cooked tortellini.
- Layer half of the tortellini mixture in a greased 9×13-inch baking dish, sprinkle with half of the mozzarella, then add the remaining tortellini. Top with the rest of the sauce and remaining mozzarella and parmesan.
- Cover with foil and bake for 25 minutes, then uncover and bake for an additional 10-15 minutes until bubbly and golden.
- Let the casserole rest for about 10 minutes before slicing and serving.
Notes
For a lighter twist, you can substitute zucchini noodles for tortellini. Store leftovers in an airtight container in the refrigerator for up to three days.
