Description

A comforting and flavorful casserole layered with tender tortellini, savory tomato sauce, and gooey cheeses, perfect for family gatherings.


Ingredients

  • 12 oz tortellini (fresh or frozen)
  • 24 oz marinara sauce
  • 8 oz fresh mushrooms (cremini or button), sliced
  • 8 oz mozzarella cheese, shredded
  • 4 oz parmesan cheese, grated
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add diced onions and minced garlic, sautéing until fragrant and translucent.
  3. Add sliced mushrooms to the skillet and cook until softened.
  4. Bring salted water to a boil in a large pot. Add tortellini and cook according to package instructions until al dente.
  5. Mix the sautéed mushrooms and onions with the marinara sauce in the skillet. Stir in fresh herbs and cooked tortellini.
  6. Layer half of the tortellini mixture in a greased 9×13-inch baking dish, sprinkle with half of the mozzarella, then add the remaining tortellini. Top with the rest of the sauce and remaining mozzarella and parmesan.
  7. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 10-15 minutes until bubbly and golden.
  8. Let the casserole rest for about 10 minutes before slicing and serving.

Notes

For a lighter twist, you can substitute zucchini noodles for tortellini. Store leftovers in an airtight container in the refrigerator for up to three days.
