- 1 cup farro
- 2 cups vegetable broth
- 1 cup cremini or button mushrooms, chopped
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
- 1/2 cup Parmesan cheese, grated (or nutritional yeast for a vegan option)
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, bring vegetable broth to a boil. Stir in farro, reduce heat, cover, and simmer for about 30 minutes until tender.
- In a skillet, heat olive oil over medium heat. Sauté diced onion until translucent, about 3-4 minutes. Stir in minced garlic and chopped mushrooms; cook for about 8 minutes.
- Mix the cooked farro into the skillet with the mushrooms and thyme; season with salt and pepper.
- Transfer the mixture to a greased baking dish. Sprinkle with Parmesan cheese, cover with foil, and bake for 20-25 minutes.
- Let rest for a few minutes before serving, garnished with fresh thyme.
Notes
Avoid overcrowding the pan when sautéing mushrooms to ensure they brown nicely. This dish can also be made in advance and reheated.
