  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the garlic in olive oil until fragrant, then add the mushrooms and cook until golden, about 5-7 minutes.
  3. Rinse the farro under cold water to remove excess starch.
  4. Combine the sautéed mushrooms, farro, thyme, and broth in a casserole dish.
  5. Cover the dish with aluminum foil and bake for 30-35 minutes until the farro is tender.
  6. Finish by removing the foil and baking for another 10 minutes for a crispy top. Stir and serve.
