Ingredients
Scale
- 1 cup farro
- 2 cups vegetable or chicken broth
- 2 cups mushrooms (cremini, shiitake, or button)
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)

Instructions
- Preheat the oven to 350°F (175°C).
- Sauté the garlic in olive oil until fragrant, then add the mushrooms and cook until golden, about 5-7 minutes.
- Rinse the farro under cold water to remove excess starch.

- Cover the dish with aluminum foil and bake for 30-35 minutes until the farro is tender.
- Finish by removing the foil and baking for another 10 minutes for a crispy top. Stir and serve.
Notes
Taste and adjust seasoning before serving. This dish is versatile, allowing for seasonal vegetables or a balsamic drizzle.
