  • 4 bone-in, skin-on chicken thighs
  • 1/2 cup unsalted butter
  • 2 fresh lemons, juice and zest
  • 4 cloves fresh garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Vegetables (asparagus or green beans) for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the chicken by patting it dry with paper towels. Season with salt and pepper, then place skin-side up in a baking dish.
  3. In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for about a minute until fragrant.
  4. Squeeze fresh lemon juice and add lemon zest to the butter mixture, then pour it over the chicken.
  5. Sprinkle rosemary and thyme over the top and add lemon slices for garnish.
  6. Bake for about 45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  7. If desired, broil for 1-2 minutes for extra crispiness, watching closely.

Notes

For a lighter version, substitute olive oil for butter. You can also use lime juice if you don’t have lemons.
