- 4 bone-in, skin-on chicken thighs
- 1/2 cup unsalted butter
- 2 fresh lemons, juice and zest
- 4 cloves fresh garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
- Vegetables (asparagus or green beans) for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the chicken by patting it dry with paper towels. Season with salt and pepper, then place skin-side up in a baking dish.
- In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for about a minute until fragrant.
- Squeeze fresh lemon juice and add lemon zest to the butter mixture, then pour it over the chicken.
- Sprinkle rosemary and thyme over the top and add lemon slices for garnish.
- Bake for about 45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- If desired, broil for 1-2 minutes for extra crispiness, watching closely.
Notes
For a lighter version, substitute olive oil for butter. You can also use lime juice if you don’t have lemons.
