- 8 oz goat cheese, softened
- 2 cups fresh tomatoes, chopped
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil, plus more for drizzling
- 1/2 tsp red pepper flakes
- 1 baguette, sliced and toasted
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine chopped tomatoes, minced garlic, chopped basil, olive oil, and a pinch of salt. Mix gently and let sit.
- In another bowl, soften the goat cheese and mix in red pepper flakes.
- Spread the softened goat cheese mixture in a baking dish and pour the tomato mixture on top. Drizzle with olive oil.
- Bake for 20-25 minutes until bubbly and golden.
- While baking, toast baguette slices until golden brown.
- Serve warm with toasted baguette slices.
Notes
For an extra creamy texture, blend in cream cheese or sour cream. Use fresh ingredients for the best flavor.
