Ingredients

  • 2 cups fresh tomatoes, chopped
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil, plus more for drizzling
  • 1/2 tsp red pepper flakes
  • 1 baguette, sliced and toasted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine chopped tomatoes, minced garlic, chopped basil, olive oil, and a pinch of salt. Mix gently and let sit.
  3. In another bowl, soften the goat cheese and mix in red pepper flakes.
  4. Spread the softened goat cheese mixture in a baking dish and pour the tomato mixture on top. Drizzle with olive oil.
  5. Bake for 20-25 minutes until bubbly and golden.
  6. While baking, toast baguette slices until golden brown.
  7. Serve warm with toasted baguette slices.
