Ingredients

  • 8 ounces feta cheese
  • 4 cups fresh spinach
  • 34 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh herbs (thyme, dill, or oregano), for garnish
  • Splash of lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat a drizzle of olive oil over medium heat.
  3. Sauté minced garlic until golden, being careful not to burn.
  4. Add fresh spinach and stir until wilted, about 2 minutes.
  5. Cook orzo according to package instructions until al dente; drain and set aside.
  6. Transfer spinach and garlic to the pot with orzo; add crumbled feta.
  7. Toss the mixture and add a splash of lemon juice.
  8. Drizzle with olive oil, then bake for 20-25 minutes until feta is melted and golden.
  9. Garnish with fresh herbs and serve!

Notes

For a gluten-free option, substitute orzo with quinoa. Feel free to add other vegetables like roasted bell peppers or sun-dried tomatoes.
