Ingredients

- 1 cup orzo pasta
- 8 ounces feta cheese
- 4 cups fresh spinach
- 3–4 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh herbs (thyme, dill, or oregano), for garnish
- Splash of lemon juice
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, heat a drizzle of olive oil over medium heat.
- Sauté minced garlic until golden, being careful not to burn.
- Add fresh spinach and stir until wilted, about 2 minutes.
- Cook orzo according to package instructions until al dente; drain and set aside.
- Transfer spinach and garlic to the pot with orzo; add crumbled feta.
- Toss the mixture and add a splash of lemon juice.
- Drizzle with olive oil, then bake for 20-25 minutes until feta is melted and golden.
- Garnish with fresh herbs and serve!
Notes
For a gluten-free option, substitute orzo with quinoa. Feel free to add other vegetables like roasted bell peppers or sun-dried tomatoes.
