- 4 large eggs
- 6 slices thick-cut bacon
- 1 cup aged cheddar or Monterey Jack cheese, shredded
- 4 flour tortillas
- 2 tablespoons butter or olive oil
- Optional: Chopped onions, sautéed bell peppers, jalapeños, or mushrooms
Instructions
- In a large skillet over medium heat, cook the bacon until crispy, about 7-10 minutes. Remove the bacon and leave the fat in the pan.
- In the same skillet, crack in the eggs and scramble gently, seasoning with salt and pepper. Cook until just set, about 3-5 minutes.
- Lay a tortilla flat, spread a layer of scrambled eggs, crumbled bacon, and shredded cheese. Top with another tortilla and press down.
- Wipe the skillet clean, add butter or oil, and cook the quesadilla over medium heat for 3-4 minutes until golden brown. Carefully flip and repeat on the other side.
- Remove from the pan, let cool slightly, cut into wedges, and serve warm with salsa, sour cream, or guacamole.
Notes
Keep the heat at medium to avoid burning the tortillas. Feel free to add your favorite veggies for extra flavor.
