- 1 lb lean ground beef
- 4 strips thick-cut bacon, diced
- 1 cup long-grain white rice
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup cremini mushrooms, diced
- 1 cup shredded cheddar cheese
- 2 cups beef or chicken broth
- Fresh parsley or chives, for garnish
Instructions
- In a large skillet, fry diced bacon over medium heat until crispy. Remove bacon, leaving rendered fat in the pan.
- Add diced onions and cook until soft and translucent. Toss in minced garlic and sauté for 30 seconds.
- Add ground beef, breaking apart with a wooden spoon. Season with salt and pepper; cook until browned, about 5-6 minutes.
- Mix in diced mushrooms and cook until they release their juices. Stir in the rice.
- Pour in the broth, bring to a simmer. Cover and cook for 15-20 minutes, or until rice is tender.
- Stir in crispy bacon and half of the shredded cheese until combined. Allow to melt through.
- Dish it out, sprinkle remaining cheese on top, and garnish with fresh herbs.
Notes
For a lighter version, substitute ground beef with ground turkey and use cauliflower rice instead of regular rice. Adjust seasoning to taste during cooking.
