Instructions

  1. Toast the bread until golden and crispy.
  2. Scoop the avocado into a bowl, mash it, and mix in salt, pepper, and lemon juice.
  3. Poach the eggs in simmering water with a splash of vinegar for 3-4 minutes.
  4. Spread the avocado mixture over the toasted bread and top with the poached egg.
  5. Season with additional salt, pepper, and optional toppings.
