Description

A traditional family recipe for roast chicken that celebrates the flavors of Shandong cuisine, featuring a rich marinade of soy sauce, ginger, and garlic for a succulent and crispy result.

Ingredients

Scale
  • 1 whole free-range chicken
  • ½ cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons rice wine
  • 1 tablespoon minced ginger
  • 45 cloves minced garlic
  • 1 tablespoon five-spice powder
  • Scallions for garnish

Instructions

  1. Clean the chicken under cold water and pat dry with paper towels.
  2. In a bowl, mix soy sauce, sesame oil, rice wine, ginger, garlic, and five-spice powder. Marinate the chicken for at least 2 hours, preferably overnight.
  3. Preheat the oven to 375°F (190°C).
  4. Place the marinated chicken on a roasting rack in a baking tray and roast for approximately 1.5 hours, basting every 30 minutes.
  5. Ensure the chicken’s internal temperature reaches 165°F (75°C), then let it rest for 15 minutes before carving.
  6. Serve garnished with scallions and paired with rice or stir-fry.

Notes

Ensure to marinate the chicken overnight for better flavor, and keep the skin dry before roasting for maximum crispiness.
