- 1 whole free-range chicken
- ½ cup soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons rice wine
- 1 tablespoon minced ginger
- 4–5 cloves minced garlic
- 1 tablespoon five-spice powder
- Scallions for garnish
Instructions
- Clean the chicken under cold water and pat dry with paper towels.
- In a bowl, mix soy sauce, sesame oil, rice wine, ginger, garlic, and five-spice powder. Marinate the chicken for at least 2 hours, preferably overnight.
- Preheat the oven to 375°F (190°C).
- Place the marinated chicken on a roasting rack in a baking tray and roast for approximately 1.5 hours, basting every 30 minutes.
- Ensure the chicken’s internal temperature reaches 165°F (75°C), then let it rest for 15 minutes before carving.
- Serve garnished with scallions and paired with rice or stir-fry.
