  • 2 scallions, chopped

Instructions

  1. Marinate the Chicken: Combine chicken pieces with curry powder, salt, pepper, and a splash of coconut milk in a bowl. Let marinate for at least 30 minutes.
  2. Sauté the Aromatics: Heat oil in a large skillet over medium heat. Add onions, garlic, and ginger, then sauté until onions are translucent.
  3. Brown the Chicken: Add the marinated chicken to the skillet and brown on all sides for about 5-7 minutes.
  4. Add Coconut Milk and Veggies: Pour in the remaining coconut milk and add chopped bell peppers. Stir to coat the chicken.
