- 2 tablespoons Jamaican curry powder
- 1 can coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- Fresh thyme
- 1 bell pepper, chopped
- 2 scallions, chopped
- Salt and pepper to taste
Instructions
- Marinate the Chicken: Combine chicken pieces with curry powder, salt, pepper, and a splash of coconut milk in a bowl. Let marinate for at least 30 minutes.
- Sauté the Aromatics: Heat oil in a large skillet over medium heat. Add onions, garlic, and ginger, then sauté until onions are translucent.
- Brown the Chicken: Add the marinated chicken to the skillet and brown on all sides for about 5-7 minutes.
- Add Coconut Milk and Veggies: Pour in the remaining coconut milk and add chopped bell peppers. Stir to coat the chicken.
- Simmer to Perfection: Reduce heat to low, cover, and simmer for 30-40 minutes until chicken is tender.
- Garnish and Serve: Before serving, sprinkle with scallions and thyme. Serve with rice or roti.
