Ingredients
- Chicken (breast or thighs)
- Curry powder
- Scotch bonnet pepper (or jalapeños for milder flavor)
- Coconut milk
- Onion
- Garlic
- Fresh thyme
- Ginger
- Bell pepper
- Salt
- Black pepper
Instructions
- Marinate the chicken with curry powder, salt, pepper, ginger, garlic, and diced scotch bonnet. Let sit for at least 30 minutes.
- Heat oil in a large skillet and sauté chopped onions until translucent.
- Add the marinated chicken to the skillet and brown it on both sides for about 4-5 minutes each.
- Incorporate sliced bell peppers and any additional vegetables.
- Pour in the coconut milk and scrape the pan to incorporate any bits stuck to the bottom.
- Simmer for 30-40 minutes until the chicken is tender and the sauce thickens.
- Taste and adjust seasoning before serving.
- Serve over rice and peas or fluffy white rice, garnished with fresh herbs if desired.
