Ingredients

  • Chicken (breast or thighs)
  • Curry powder
  • Scotch bonnet pepper (or jalapeños for milder flavor)
  • Coconut milk
  • Onion
  • Garlic
  • Fresh thyme
  • Ginger
  • Bell pepper
  • Salt
  • Black pepper

Instructions

  1. Marinate the chicken with curry powder, salt, pepper, ginger, garlic, and diced scotch bonnet. Let sit for at least 30 minutes.
  2. Heat oil in a large skillet and sauté chopped onions until translucent.
  3. Add the marinated chicken to the skillet and brown it on both sides for about 4-5 minutes each.
  4. Incorporate sliced bell peppers and any additional vegetables.
  5. Pour in the coconut milk and scrape the pan to incorporate any bits stuck to the bottom.
  6. Simmer for 30-40 minutes until the chicken is tender and the sauce thickens.
  7. Taste and adjust seasoning before serving.
