- 1 cup toasted walnuts
- 1/4 cup feta cheese or goat cheese (optional)

- 2 tablespoons apple cider vinegar
- 1 tablespoon honey or maple syrup
- Salt and pepper to taste
Instructions
- Wash the greens thoroughly and chop the apples into bite-sized pieces, placing them in cold water with lemon juice to prevent browning.
- Toast the walnuts in a dry skillet over medium heat until golden brown and fragrant, about 4-5 minutes, then let cool.
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey or maple syrup, and season with salt and pepper.
- In a large salad bowl, toss the mixed greens, chopped apples, dried cranberries, and cooled walnuts.
- Drizzle with dressing and toss to combine, adding more dressing if desired.
- If desired, sprinkle cheese on top before serving.
