- 1 cup apple cider
- 2 large eggs
- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and cloves.
- In another bowl, beat softened butter with granulated and brown sugars until light and fluffy, about 4-5 minutes.
- Add eggs one at a time, mixing well after each addition, then slowly pour in the apple cider and combine.
- Gradually add the flour mixture to the wet ingredients until just combined; avoid overmixing.
- Scoop heaping tablespoons of batter onto prepared baking sheets, spacing 2 inches apart, and bake for 10-12 minutes until edges are golden.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- For the filling, beat cream cheese and softened butter until smooth, then gradually mix in powdered sugar and vanilla extract.
- Spread cream cheese filling on the flat side of one pie and sandwich with another pie.
- Dust with powdered sugar if desired, and enjoy with friends or family!
Notes
For a deeper flavor, consider using maple sugar instead of brown sugar. Let the baked pies cool completely before adding the filling to avoid melting.
