  • 1 cup apple cider
  • 2 large eggs
  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and cloves.
  3. In another bowl, beat softened butter with granulated and brown sugars until light and fluffy, about 4-5 minutes.
  4. Add eggs one at a time, mixing well after each addition, then slowly pour in the apple cider and combine.
  5. Gradually add the flour mixture to the wet ingredients until just combined; avoid overmixing.
  6. Scoop heaping tablespoons of batter onto prepared baking sheets, spacing 2 inches apart, and bake for 10-12 minutes until edges are golden.
  7. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  8. For the filling, beat cream cheese and softened butter until smooth, then gradually mix in powdered sugar and vanilla extract.
  9. Spread cream cheese filling on the flat side of one pie and sandwich with another pie.
