Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces cremini or shiitake mushrooms, sliced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 potatoes, diced
  • 6 cups chicken or vegetable broth
  • 1 teaspoon thyme, fresh
  • 1/4 cup parsley, fresh, chopped
  • 1/2 cup cream or milk (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic; cook until onions are translucent (about 3-4 minutes).
  2. Stir in the sliced mushrooms and cook for another 5-7 minutes until softened.
  3. Add diced carrots, celery, and potatoes; sauté for an additional 5 minutes.
  4. Pour in the broth and bring to a gentle boil. Reduce heat and let simmer for about 20-30 minutes until vegetables are tender.
  5. Stir in fresh thyme and parsley, and add cream if using. Simmer for another 5 minutes.
  6. Season with salt and pepper to taste. Serve warm with crusty bread.
