Ingredients

  • 1/2 cup ground almonds or almond meal
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • Pinch of salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 large egg
  • 1/2 cup milk or cream
  • 1 teaspoon almond extract (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, ground almonds, sugar, baking powder, and salt until well blended.
  3. Cut in the butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, beat together the egg, milk (or cream), and almond extract.
  5. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  6. Turn the dough onto a lightly floured surface and shape into a circle about 1 inch thick. Cut into wedges or use a biscuit cutter.
  7. Transfer the scones to the prepared baking sheet, allowing space between each one.
  8. Brush the tops with a mixture of beaten egg and a splash of milk for a shiny finish (optional).
  9. Bake for 15-20 minutes or until golden brown.
  10. Allow to cool slightly before serving warm.

Notes

For a gluten-free version, use almond flour instead of all-purpose flour and ensure all other ingredients are gluten-free.
