- 2 cups all-purpose flour
- 1/2 cup ground almonds or almond meal
- 2 tablespoons sugar
- 1 tablespoon baking powder
- Pinch of salt
- 1/2 cup unsalted butter, chilled and cubed
- 1 large egg
- 1/2 cup milk or cream
- 1 teaspoon almond extract (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, ground almonds, sugar, baking powder, and salt until well blended.
- Cut in the butter until the mixture resembles coarse crumbs.
- In a separate bowl, beat together the egg, milk (or cream), and almond extract.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Turn the dough onto a lightly floured surface and shape into a circle about 1 inch thick. Cut into wedges or use a biscuit cutter.
- Transfer the scones to the prepared baking sheet, allowing space between each one.
- Brush the tops with a mixture of beaten egg and a splash of milk for a shiny finish (optional).
- Bake for 15-20 minutes or until golden brown.
- Allow to cool slightly before serving warm.
Notes
For a gluten-free version, use almond flour instead of all-purpose flour and ensure all other ingredients are gluten-free.
