Description

  • 4 boneless chicken breasts
  • 4 slices of bacon
  • 1 cup mushrooms (cremini or button), sliced
  • 1 cup Swiss cheese, shredded
  • 1/2 cup barbecue sauce (plus more for serving)
  • Salt and pepper, to taste
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon paprika (optional)
  • Fresh herbs (parsley or thyme), for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Marinate chicken in barbecue sauce for 30 minutes.
  3. Cook bacon in a skillet over medium heat until crispy, then drain on paper towels.
  4. Sauté mushrooms in the bacon drippings until golden brown, seasoning with salt and pepper.
  5. Remove mushrooms and cook marinated chicken in the same skillet for 5-7 minutes per side until golden and cooked through.
  6. Layer sautéed mushrooms and crispy bacon on top of each chicken breast, then cover with Swiss cheese.
  7. Transfer to the oven and bake for about 15 minutes, until cheese is melted and bubbly.
  8. Serve hot, topped with fresh herbs and additional barbecue sauce.
