- 2 boneless, skinless chicken breasts
- 2 cups fresh cabbage, sliced
- 2 cloves garlic, minced
- 4 slices whole grain bread
- 2 tablespoons olive oil
- Fresh herbs (parsley, dill, or cilantro)
- Salt and pepper, to taste
Instructions
- Slice the cabbage into thin strips and mince the garlic. Cut the chicken breast into thin pieces.
- Heat olive oil in a non-stick skillet over medium heat.
- Add chicken to the skillet, season with salt and pepper, and cook for 3-4 minutes per side until golden brown.
- Remove chicken and in the same skillet, sauté garlic and cabbage for about 5 minutes until tender. Ensure cabbage retains some crunch.
- Assemble the sandwich by placing sautéed cabbage on a slice of bread, followed by chicken and fresh herbs, then top with another slice of bread.
- Cut in half, serve warm, and enjoy!
Notes
Customize with spices like paprika or chili flakes for a kick. Add cheese or use different greens if desired.
