Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups fresh cabbage, sliced
  • 2 cloves garlic, minced
  • 4 slices whole grain bread
  • 2 tablespoons olive oil
  • Fresh herbs (parsley, dill, or cilantro)
  • Salt and pepper, to taste

Instructions

  1. Slice the cabbage into thin strips and mince the garlic. Cut the chicken breast into thin pieces.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add chicken to the skillet, season with salt and pepper, and cook for 3-4 minutes per side until golden brown.
  4. Remove chicken and in the same skillet, sauté garlic and cabbage for about 5 minutes until tender. Ensure cabbage retains some crunch.
  5. Assemble the sandwich by placing sautéed cabbage on a slice of bread, followed by chicken and fresh herbs, then top with another slice of bread.
  6. Cut in half, serve warm, and enjoy!

Notes

Customize with spices like paprika or chili flakes for a kick. Add cheese or use different greens if desired.
